Estimated cost

$20 – $60

Estimated time

2 – 3 hours

Lifespan

10+ years for stone; 4–6 years for wood

Soil needed

About 0.5 cubic yards of mixed soil and gravel

Weight empty

50–150 lbs depending on material

Weight full

Mediterranean herbs at the top, moisture-loving herbs at the bottom

Flat stones, bricks, or broken concreteEnough for a 4 ft spiral wallRetaining wall
Gravel or coarse sand1–2 bagsDrainage at the top
Quality potting mix or garden soil10–15 gallonsFills pockets
Compost1–2 bagsMixed into soil
  • Β·Optional: landscape fabric under the base

Steps

  1. 1Mark a 4–5 ft diameter circle on flat ground.
  2. 2Lay the first course of stones in a spiral shape, leaving the center open for the tallest point.
  3. 3Build the wall up in 3–4 courses, making the center about 2–3 ft tall.
  4. 4Fill the center and top pocket with gravel first, then a gritty soil mix for drainage.
  5. 5Fill lower pockets with richer, moisture-retentive soil and compost.
  6. 6Plant rosemary, thyme, and oregano at the top; parsley, chives, and cilantro in the middle; mint in a contained lower pocket.
  7. 7Water the lower pockets more often than the top.
  8. 8Harvest from the top downward to encourage bushy growth.

Tools needed

  • Β·Shovel
  • Β·Wheelbarrow
  • Β·Work gloves
  • Β·Level (small)

Common mistakes to avoid

  • Β·Building it too tall to reach the top easily
  • Β·Using only potting soil β€” add grit for drainage at the top
  • Β·Planting mint in open soil instead of a contained pocket
  • Β·No gravel base β€” waterlogged top kills rosemary and thyme

Maintenance tips

Trim herbs regularly to keep shape. Refresh the top with gritty compost each spring. Weed between stones before plants seed.
