Steps

  1. 1Build a 2Γ—2 foot box with corner posts extending 3 feet tall.
  2. 2Staple hardware cloth across the bottom for drainage.
  3. 3Set the tower in a sunny spot on top of cardboard or bare soil.
  4. 4Fill the bottom 8 inches with potting mix.
  5. 5Plant seed potatoes with eyes up, spaced evenly.
  6. 6Cover with 4 inches of soil and water gently.
  7. 7As shoots grow, add soil or straw mulch, leaving the top 2–4 inches of leaves exposed.
  8. 8Repeat hilling until the tower is full.
  9. 9Once vines yellow and die back, remove the side boards and harvest.

Maintenance tips

Water deeply 2–3 times per week. Add soil every time plants grow 6 inches. Stop watering once vines yellow.
