How to plant

Nick or soak the hard seed overnight to speed germination. Sow in deep pots of well-drained mix, keep warm and humid, and transplant carefully — seedlings resent root disturbance.

Soak in warm water 24 hours; nick hard coat if germination is slow.

Grower's tip

The red-orange seeds are the source of annatto food coloring. The spiny seed pods open when ripe; wear gloves when harvesting.

Trees usually mean patience — collect fully ripe seed in fall, clean pulp off, and give most species a cold winter (real or in the fridge) before they'll germinate.
