How to plant

Surface-sow onto damp mix, press in, do not cover. Keep at 75–85°F with a humidity dome. Much easier: root a grocery-store stalk in a jar of water for 2–3 weeks, then pot. Transplant outside only after nights stay above 55°F.

Grower's tip

Harvest by cutting outer stalks at soil level — the fat white base is the culinary part. Dig and pot a division before frost to overwinter indoors.

Clumping types behave in pots; running types will escape any bed you give them.

Detailed harvesting

Cut ornamental clumps back to 4–6 in (10–15 cm) in late winter, before new shoots emerge. Leave the winter structure standing until then.

Dry seed heads upside down in a paper bag for arrangements or re-sowing.
