How to plant
Nick or soak the hard seed. Transplant to a hot spot with a trellis — vines climb 8–10 ft. Pick young leaves and tips continually; the more you cut the bushier it grows. Thick succulent leaves that never bolt in heat.

Perfect summer 'spinach' where true spinach bolts. Slightly mucilaginous cooked (like okra); crunchy raw in salads.

Watering
Consistent — 1 in per week minimum, more in heat. Uneven water triggers bolt.

Overwatered: soft rot at the crown, yellow lower leaves. Underwatered: bitter flavor, tough leaves, premature bolting.
Prefers top-watering — Top-water deeply at the base in the morning. Wet leaves at night cause blackspot and powdery mildew.

Rinse, spin dry, and store in a sealed bag with a paper towel in the crisper 5–7 days. Blanch and freeze for cooking greens.
